WAGYU BEEF STROGANOFF

INGREDIENTS
8 Mushrooms (baby bella) sliced
2 sprig thyme
4 garlic cloves minced
2 shallots minced
2 cups beef stock
.5 cup chicken stock
.5 cup heavy cream
.5 cup sour cream
5 cups dry egg noodles
2 tbsp chopped parsley
2 tbsp chives
INSTRUCTIONS
In a large saucepan, sear steak tips in neutral oil on med/high heat and remove once browned.
In the same pan, add mushrooms and cook down for 3 minutes.
Add in garlic and shallots and sweat until fragrant, then add the thyme. Cook for 3 minutes.
Deglaze with the stock and bring to a boil, then reduce to a simmer.
Add the heavy cream and season with salt and pepper.
Add the cooked egg noodles. Par cook the noodles to 80%, then finish in the sauce for 2 minutes.
Once the noodles are cooked, add in the steak tips, sour cream and chopped herbs.
Season with salt and pepper.
