WAGYU BEEF STROGANOFF

INGREDIENTS

  • 1 lb Back Creek Wagyu Steak Tips

  • 8 Mushrooms (baby bella) sliced

  • 2 sprig thyme

  • 4 garlic cloves minced

  • 2 shallots minced

  • 2 cups beef stock

  • .5 cup chicken stock

  • .5 cup heavy cream

  • .5 cup sour cream

  • 5 cups dry egg noodles

  • 2 tbsp chopped parsley

  • 2 tbsp chives

INSTRUCTIONS

  1. In a large saucepan, sear steak tips in neutral oil on med/high heat and remove once browned.

  2. In the same pan, add mushrooms and cook down for 3 minutes.

  3. Add in garlic and shallots and sweat until fragrant, then add the thyme. Cook for 3 minutes.

  4. Deglaze with the stock and bring to a boil, then reduce to a simmer.

  5. Add the heavy cream and season with salt and pepper.

  6. Add the cooked egg noodles. Par cook the noodles to 80%, then finish in the sauce for 2 minutes.

  7. Once the noodles are cooked, add in the steak tips, sour cream and chopped herbs.

  8. Season with salt and pepper.
