WAGYU OSSO BUCCO

Ingredients
2-3 lbs of Back Creek Wagyu Shanks
1/2 cup diced carrots
1/2 cup of diced celery
1 medium onion, diced
2 tbsp chopped garlic
1 cup white wine
1-2 cups of beef stock
1 can (16 oz) of crushed tomatoes
1 can (6 oz) tomato paste
Directions
Sauté onions and garlic, and add carrots and celery. Combined sautéed ingredients in a pot with wine, beef stock, crushed tomatoes, and tomato paste. Simmer for a couple of hours until the marrow from the shank is loosened. Remove the shank to remove the meat. Cut meat into pieces and add back to the stew. Serve over rice or as a soup with grilled cheese.
